Here’s a lightened-up version of Weight Watchers Crack Chicken — creamy, cheesy, and full of flavor without all the extra points. It’s great in bowls, wraps, or over cauliflower rice.


🐔 Weight Watchers Crack Chicken (Crockpot or Instant Pot)

Servings: 6
WW Points (per serving): ~4–6 (depends on plan & brands)


Ingredients:

  • 2 lbs boneless, skinless chicken breasts

  • 1 (8 oz) block reduced-fat cream cheese (Neufchâtel, 1/3 less fat)

  • 1 packet ranch seasoning mix (or homemade for lower sodium)

  • 1/2 cup reduced-fat shredded cheddar cheese

  • 4 slices cooked turkey bacon, crumbled

  • 1/4 cup chopped green onions

  • Optional: 1/4–1/2 cup chicken broth (helps thin sauce if needed)


🔪 Instructions:

Slow Cooker Method:

  1. Add to crockpot: Place chicken breasts in the slow cooker. Sprinkle with ranch seasoning and top with cream cheese (cut into chunks).

  2. Cook: Cover and cook on low for 6–7 hours or high for 3–4 hours

  3. Shred & mix: Shred the chicken directly in the pot. Stir in cheddar cheese, crumbled bacon, and green onions. Add a little broth if sauce is too thick.

  3. Finish: Shred chicken, then stir in cheddar, turkey bacon, and green onions.
