Ingredients:

  • 2 cups cooked skinless chicken breast, shredded or diced

  • 3 cups fresh broccoli florets (lightly steamed or blanched)

  • 1 cup cooked brown rice or cauliflower rice (optional)

  • 1 (10.5 oz) can 98% fat-free cream of chicken soup (or homemade WW-friendly version)

  • 1/2 cup plain nonfat Greek yogurt

  • 1/2 cup reduced-fat shredded cheddar cheese

  • 1/4 cup grated Parmesan cheese

  • 1 tsp garlic powder

  • 1/2 tsp onion powder

  • Salt & pepper, to taste

  • Cooking spray


Optional Topping (adds ~1 point per serving):

  • 2 tbsp whole wheat breadcrumbs or crushed light crackers


Instructions:

  1. Preheat oven to 375°F (190°C). Lightly spray a 9×13 casserole dish with cooking spray.

  2. Prep broccoli:
    Steam or blanch broccoli florets for 2–3 minutes until just tender. Drain and set aside.

    In a large bowl, combine the cream of chicken soup, Greek yogurt, garlic powder, onion powder, salt, pepper, and 1/4 cup cheddar cheese.

  4. Add chicken and broccoli:
