Ingredients
  

  • 2 cups cooked skinless chicken breast shredded or diced
  • 3 cups fresh broccoli florets lightly steamed or blanched
  • 1 cup cooked brown rice or cauliflower rice optional
  • 1 10.5 oz can 98% fat-free cream of chicken soup (or homemade WW-friendly version)
  • 1/2 cup plain nonfat Greek yogurt
  • 1/2 cup reduced-fat shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt & pepper to taste
  • Cooking spray

Method
 

  1. Preheat oven to 375°F (190°C). Lightly spray a 9x13 casserole dish with cooking spray.
  2. Prep broccoli:
  3. Steam or blanch broccoli florets for 2–3 minutes until just tender. Drain and set aside.
  4. Mix the base:
  5. In a large bowl, combine the cream of chicken soup, Greek yogurt, garlic powder, onion powder, salt, pepper, and 1/4 cup cheddar cheese.
  6. Add chicken and broccoli:
  7. Fold in the cooked chicken, broccoli, and cooked rice (if using). Stir until well coated.
  8. Assemble the casserole:
  9. Pour the mixture into the prepared dish. Sprinkle with remaining cheddar and Parmesan cheese. Add breadcrumb topping if using.
  10. Bake:
  11. Bake uncovered for 25–30 minutes, or until the cheese is melted and the top is lightly golden.
  12. Serve:
  13. Let cool for a few minutes before serving.
