Preheat Oven:
Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish.
Cook the Ground Beef:
In a skillet, heat olive oil over medium heat.
Add diced onion and cook until soft.
Add ground beef and garlic, season with salt, pepper, and paprika.
Cook until beef is browned. Drain excess fat if needed.
Prepare the Sauce:
In a bowl, mix cream of mushroom soup with milk until smooth.
Stir in half of the shredded cheese.
Assemble the Casserole:
Layer half of the sliced potatoes in the baking dish.
Top with half the ground beef mixture.
Pour half of the soup mixture over the top.
Repeat layers with remaining potatoes, beef, and sauce.
Cover tightly with foil.
Bake:
Bake covered for 50–60 minutes, or until potatoes are tender.
Add Cheese & Finish Baking:
Remove foil, sprinkle remaining cheese over top.
Bake uncovered for an additional 10–15 minutes, until cheese is melted and bubbly.
Serve:
Let sit for 5–10 minutes before serving. Garnish with parsley or green onions if desired.
