Ingredients
  

  • 1 lb extra lean ground beef 96% lean or thin-sliced sirloin
  • 1 small onion diced
  • 2 cloves garlic minced
  • 8 oz mushrooms sliced
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 1 cup low-sodium beef broth
  • 1/2 cup plain nonfat Greek yogurt
  • 1 tbsp light sour cream optional for extra creaminess
  • Salt & black pepper to taste
  • 1/2 tsp paprika
  • Olive oil spray or 1 tsp olive oil
  • 4 cups cooked whole wheat egg noodles or light pasta substitute like fiber pasta or zoodles

Method
 

  1. Cook the beef:
  2. Spray a large skillet with olive oil spray. Cook ground beef or sliced sirloin over medium-high heat until browned. Drain excess fat, if any. Set aside.
  3. Sauté veggies:
  4. In the same pan, sauté onion and garlic for 2–3 minutes. Add mushrooms and cook until softened and browned (about 5–7 minutes).
  5. Deglaze and flavor:
  6. Add Worcestershire sauce, Dijon mustard, paprika, and beef broth. Bring to a simmer. Return the beef to the skillet and let everything simmer together for 5–7 minutes.
  7. Make it creamy:
  8. Remove from heat and let cool slightly before stirring in the Greek yogurt and sour cream (this prevents curdling). Mix until smooth.
  9. Serve:
  10. Spoon over cooked egg noodles or preferred pasta substitute. Garnish with parsley if desired.
