Ingredients
  

  • 4 cups fresh broccoli florets bite-sized
  • 1/4 cup red onion finely chopped
  • 1/4 cup shredded reduced-fat cheddar cheese
  • 1/4 cup real bacon bits or turkey bacon crumbles
  • 1/4 cup dried cranberries reduced sugar if available
  • 1/4 cup sunflower seeds optional or use 2 tbsp for fewer points
  • For the dressing:
  • 1/2 cup plain nonfat Greek yogurt
  • 2 tablespoons light mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon honey or sugar substitute like Stevia or monk fruit
  • Salt & pepper to taste

Instructions
 

  • Make the dressing:
  • In a small bowl, whisk together Greek yogurt, light mayo, vinegar, honey, salt, and pepper. Chill if making ahead.
  • Prepare the salad:
  • In a large bowl, combine broccoli, red onion, cheddar, bacon bits, cranberries, and sunflower seeds.
  • Toss together:
  • Pour dressing over the salad and toss well to coat. Let it sit for at least 30 minutes in the fridge before serving (better if chilled for 2+ hours).
