- 4 cups fresh broccoli florets bite-sized
- 1/4 cup red onion finely chopped
- 1/4 cup shredded reduced-fat cheddar cheese
- 1/4 cup real bacon bits or turkey bacon crumbles
- 1/4 cup dried cranberries reduced sugar if available
- 1/4 cup sunflower seeds optional or use 2 tbsp for fewer points
- For the dressing:
- 1/2 cup plain nonfat Greek yogurt
- 2 tablespoons light mayonnaise
- 1 tablespoon apple cider vinegar
- 1 tablespoon honey or sugar substitute like Stevia or monk fruit
- Salt & pepper to taste
Make the dressing:
In a small bowl, whisk together Greek yogurt, light mayo, vinegar, honey, salt, and pepper. Chill if making ahead.
Prepare the salad:
In a large bowl, combine broccoli, red onion, cheddar, bacon bits, cranberries, and sunflower seeds.
