Ingredients
  

  • 1 lb ground turkey 99% lean
  • 1 cup diced onion
  • 1 bell pepper diced
  • 1 zucchini diced
  • 1 15 oz can black beans, rinsed and drained
  • 1 10 oz can diced tomatoes with green chilies (like Rotel)
  • 1/2 cup frozen corn
  • 1 packet low-sodium taco seasoning
  • 1/4 cup water
  • 3/4 cup reduced-fat shredded Mexican cheese
  • Cooking spray

Method
 

  1. Preheat oven to 375°F (190°C). Spray a 9x13 baking dish with cooking spray.
  2. Cook the turkey:
  3. In a large skillet, cook ground turkey over medium heat until browned. Drain excess liquid if needed.
  4. Add vegetables:
  5. Add onion, bell pepper, and zucchini. Cook until softened (5–7 minutes).
  6. Mix in beans and corn:
  7. Stir in black beans, corn, diced tomatoes (with juices), taco seasoning, and water. Simmer for 5 minutes.
  8. Assemble the casserole:
  9. Pour the mixture into the prepared baking dish. Sprinkle cheese evenly on top.
  10. Bake:
  11. Bake uncovered for 15–20 minutes, or until cheese is melted and bubbly.
  12. Serve:
  13. Let it rest 5 minutes before serving. Garnish with chopped cilantro, salsa, or fat-free Greek yogurt (optional).
