Ingredients
  

  • 6 large hard-boiled eggs peeled and halved
  • 3 tbsp non-fat plain Greek yogurt
  • 1 tsp Dijon mustard
  • 1 tsp white vinegar or pickle juice your choice!
  • 1/4 tsp garlic powder
  • 1/4 tsp smoked paprika plus extra for garnish
  • Salt and pepper to taste
  • Optional: chopped fresh dill chives, or a dash of hot sauce for extra flavor

Instructions
 

  • Remove yolks and place them in a bowl. Set egg whites aside on a plate.
  • Mash yolks with Greek yogurt, mustard, vinegar/pickle juice, garlic powder, paprika, salt, and pepper until smooth.
  • Spoon or pipe the mixture evenly into each egg white half.
  • Sprinkle with a touch of paprika and fresh herbs if desired.
  • Chill for 15–30 minutes before serving for best flavor.
